In preparation for St. Patrick’s Day, this Irish descendent makes vegan Irish Soda Bread. It’s five simple ingredients I first mixed together for a Science Fair in grade school. I got first place, no doubt since the judges got to eat the results.
I cherish the many sweet memories of my childhood. While there are many conflicts today, especially between Russia and the Ukraine, I reflect on my ancestors fleeing their homeland’s strife. I benefit from their efforts as I pray for peaceful resolution for all boundary disputes.

One and three-quarter cups nondairy milk, blended with 2 tablespoons apple cider vinegar, set aside to curdle for 10 minutes. Three and three-quarter cups flour of your choice sifted with a half teaspoon salt and 1 1/2 teaspoons baking soda. Once the vegan buttermilk has curdled, pour it into the sifted dry ingredients, and mix until sticky. Form into 2- 1 1/2 inch tall round loaves and cut across the top. Bake in a preheated 425° oven for 20 minutes. Cool for a half an hour before slicing.
